"We are about to pay 3k out of our own pockets (all of our savings...) to have our upstairs floors fixed as the beams are at different heights across the house making the chipboard floors badly unlevel"

As it is under 5000 you could try the Small Claims Court. See this BBC guide - http://www.bbc.co.uk/wales/x-ray/allarticles/stories/2002_8_smallclaimscourts.shtml

I live on a newish Redrow estate and we have had a nightmare with the roofing. Lots of houses have lost ridge and hip tiles in windy weather. Redrows response is that it is storm damage and we should claim on our house insurance.
The simple fact is that the ridge and hip tiles were not installed to the manufacturer's recomendations or the relevant British Standards.
Redrow have attempted many botched repairs on a number of houses but still not actually fixed all the problems.......
